Martha Stewart, known for her food products, cookbooks and TV programs, has shared her trick to make ‘the best scrambled eggs in the world’: to fry the eggs in clear butter.

She explains in her program Martha Stewart’s Cooking School that clear butter is ‘unsalted butter that has been melted and separated from whey and dairy proteins found in plain butter’. And according to her, it helps to make your scrambled eggs even better.

Funny enough, she discovered this trick when she used a pan with clear butter, which was in the fridge after she had made lobster the day before, writes the media Business Insider.

The recipe couldn’t be easier – simply use eggs and unsalted butter. First, you need to handle the butter, and chef and author Meggan Hill explains exactly how to do it.

You start by melting the butter at low heat. Meggan notes that ‘if the butter boils, the milk proteins are spread out in the fat and then you cannot foam them from’.

« Foam the foamy layer of dairy proteins that lie on top, » she says.

When done, you are left with ‘pure butter oil’. Then use a soup spoon to pour it into a glass and set it aside. Now you’re done with the butter.

Then knock two eggs into a small bowl, add a little salt, and whisk the eggs well together. Turn on the stove on low heat and add some of the golden butter to the pan and wait until hot. A quick trick from Martha is to drip some water in the forehead – if it sews, the butter is ready.

Are the forehead and butter ready? Pour the eggs into the pan and stir them with a rubber patel.

« You want the eggs to sit down and be prepared, but they must not turn brown or too hard, » Martha says in a clip from Martha Stewart’s Cooking School.

Keep stirring gently in the eggs and after a few minutes you have ‘beautiful, airy and golden’ scrambled eggs ready to be eaten. After that, it is up to you to decide whether you want to use your scrambled eggs on toast, as part of a larger breakfast table, or you just want to eat them for themselves.
