Time for rhubarb / day

Mid -May is the time when the rhubarb should be eaten as much as you can and in which ways can be figure out how to cook them. Because at the moment they are the worst and crisp. This time I offer ideas for two salty dishes with rhubarb to show that they can also be cooked with meat. Sweet, of course, rhubarb crumbs. Without it, no rhubarb season can be done.


Rhubarb and Ingver Marinated Vista

Ingredients: 6 chicken hams; Marinade – 200 g rhubarb (peeled, cut), 2 tbsp. k. Honey, 1 tbsp. k. Soy sauces, 1 tbsp. k. Balsamic or apple vinegar, 2 tsp. fresh grated ginger, 1 compressed garlic clove, a pinch of chili flakes (optional), salt, pepper to taste

1. Prepare the marinade first. Put the rhubarb in the pot with a little water, cook until soft (about 10 min). 2. Add honey, soy sauce, vinegar, ginger, garlic and chili. 3. Stir and cook for another 5 minutes until thickened. Take off the fire and cool. 4. Chicken hams are cooked in the prepared marinade for at least 2-3 hours. Bake on the grill or in the oven.


Pork with rhubarb and onions

Ingredients: 500 g of pork (shoulder or ham, cut into pieces), 1 large onion (sliced), 3-4 cherries (cut in half), 2 garlic cloves, 200 g rhubarb (cut into pieces), 1 tbsp. k. Honey, 1 tsp. salt, pepper to taste, 1 cup of broth or water, oil for frying

1. The meat is fried in oil until golden. 2. Add the onions, garlic, bake for another 5 minutes, add tomatoes and bake for 2 minutes. 3. Stir rhubarb, honey, salt and pepper. Add the broth. 4 stew on low heat for ~ 40 minutes until the meat is soft. 5 Serve with potatoes, buckwheat or rice.


Rhubarb crumbs

Ingredients: 400 g rhubarb (peeled and cut into pieces), 150 g sugar (or to taste), 1 tsp. vanilla sugar, 100 g flour, 100 g oatmeal, 120 g butter (cold, cubes), pinch of salt

1. Preheat oven to 180 ° C. 2. Rhubarb is mixed with half sugar and vanilla sugar, adding a baking dish. 3. Mix flour, oatmeal, remaining sugar and salt in a separate bowl. Add the butter and crush with your fingers until a drastic mass is formed. 4. Cover the crumb rhubarb and bake for ~ 35-40 minutes until the top is golden brown. 5. Serve with ice cream or whipped cream.
