The frost disappears, the sun comes out and the ten-degree mark is cracked. The first ice cream parlors reopened in Augsburg in time. The owners used the winter break well: “My wife Rita and I visited the Sigep ice fair in Rimini. We are every year and we find out about new technologies, varieties and concepts, ”says Fernando Stanghellin, who belongs to the Stanghetto on Königsplatz. The ice cream parlor offers 48 varieties in the upcoming season. Summer has not yet started, when the first trends are already emerging.

16 flavors that Fernando Stanghellin has on offer this year are considered premium varieties and change weekly. “Arabic and-oriented varieties are trendy: especially ice cream in the way of the dubai chocolate. In addition, there are varieties such as caramelized walnut with figs or Sicilian mandarins with sour cream, ”says Stanghellin. In addition, sour and fresh varieties are also in demand. “In the high season we offer varieties with curd cheese, cheesecake or soy milk. Maybe we also do something with passion fruit and pomegranate, ”says his wife Rita Marques. The prices of the previous year were retained: 1.80 euros per ball for classic varieties, 2.10 euros for premium varieties.

Chocolate with angel hair: The Dubai trend has also arrived at ice

At 1.70 euros per ball, the ice from Tutti Frutti in the old town is a little cheaper. Owner Christian Bagatella already offers a chocolate ice cream with pistachio cream and angel hair, which is modeled on the popular Dubai chocolate. “The trend has drastically increased the market price of pistachios. Therefore, the Dubai ice cream and the pistachio ice cream cost two euros per ball, ”says Bagatella. “There will soon be an ice cream for children that tastes of peach-old tea. It is inspired by the Pokémon Glumanda.  » The bestseller in Tutti Frutti has been the Salted Caramel variety for several years. According to Christian Bagatella, the vegan types of ice cream are also an unbroken trend. He also has vegan fruit ice cream and vegan delicately chocolate ice cream.

Jürgen Riess, who belongs to the Giotto in Gersthofen, has a preference for classics. He sees the Dubai chocolate trend critically: “I don't like Dubai chocolate. For me there will soon be a baklava ice cream, with a 60 percent proportion of pistachia. ” To implement hip trends as an ice cream type, he doesn't always like. He prefers the classics: “We have an intensive apricot ice cream with a high fruit content. It tastes best to me. Blueberry is also great.  » It also offers selected trend varieties, but most customers come because of the classics: « No variety will sell better than vanilla in any ice cream parlor. »

Like the Giotto, the Eiscafé Dolomiti in Lechhausen is open almost all year round. « In winter we mainly sell cakes, coffee and also beer, » says Managing Director Hanna Hanna. “We started our ice season a few days ago. What we offer depends on the weather. If it is very hot, there are rather fruity varieties-such as passion fruit, mango ice cream and forest fruit. In spring we are more likely to sell the creamy varieties, i.e. Stracciatella, children's Bueno and Oreo ice cream.  » He keeps the ice prices at 1.70 euros, but he takes an increase to 1.80 to 1.90 euros in April or May. This is due to the fact that the ingredients in shopping have become 15 to 20 percent more expensive. He also develops new types of ice cream with which he wants to surprise customers. One is planned for children: « A new variety will be the unicorn ice cream that tastes of vanilla and raspberry and is garnished with smarties and sugar sprinkles, » reveals Hanna Hanna.
