Recipes with wine / day

This time I offer three recipes coming from winemaking countries. There, wine is also used in food recipes.

Colleague Kristine wrote more about the cock in the gourmet column. Red wine biscuits are Italian classics. They will be even more delicious the next day as the wine aroma strengthens! If you want, you can complement them with almonds or nuts.

Fondue with Grijer and Emmentale cheese is a Swiss dish. Fondue perfectly fits with the same white wine used in the recipe.


Cock in wine

Ingredients (4 portions): 1 cock or 4 large chicken ham, 200 g bacon (cut into small pieces), 1 large onion (chopped), 2 carrots (sliced), 3 compressed garlic cloves, 250 g of mushrooms (mushrooms or other; sliced), 2 bay leaves, 1 tsp. Thyme, 1 bottle of red wine, 500 ml chicken broth, 2 tbsp. k. Olive oil, salt and pepper to taste, 1 tbsp. k. flour sauce, greens for decoration

1. If a whole cock is used, it is cut into 8 pieces (breasts, thighs, wings). 2. Heat 1 tbsp in a large saucepan. k. Olive oil and fry the bacon until it is crisp. Put it on the plate. 3. Add the rest of the olive oil into the same pot and fry the meat on all sides until golden. Put on the bacon. 4. Put onions, carrots and garlic in the same pot. Stew for about 5-7 minutes. Add the mushrooms and continue to stew for another 5 minutes until the liquid is released. 5. Place the meat and bacon back in the saucepan, add the spices, pour the chicken broth and red wine. Heat to boil, then reduce heat. 6. Stew on low heat for 1-1.5 hours until the meat becomes soft and aromatic. If the sauce is too thick, add more broth. 7. Remove meat and largest vegetable pieces, if any. Mix the flour with 1 tbsp. k. Water and condenses the sauce in the pot. Mix thoroughly. 8. Put the meat back in the saucepan, heat until the sauce throws the bubble, then cut the fire and can be served.


Cheese fondue with white wine

Ingredients: 200 g Grijer cheese (grated), 200 g of Emmentale cheese (grated), 1 garlic clove, 250 ml of dry white wine (such as Sauvignon Blanc or Riesling), 1 tsp. Lemon juice, 1 tbsp. k. starches, 2 tbsp. k. Cherry Brandy (Kirsch) (Optional), a pinch of nutmeg, salt and pepper to taste, baguette or chabata and fresh vegetables for serving

1. The inside of a deep pan or special fondue is rubbed with a cut garlic clove to give the aroma. 2. Heat white wine and lemon juice in a saucepan on medium heat, but do not allow it to boil. 3. Gradually add the grated cheese, stirring constantly until it melts and forms a homogeneous mass. 4. In a bowl mix the corn starch with liqueur and add to the fondue mass. Continue to stir until the fondue thickens. 5. Add a pinch of nutmeg, salt and pepper to taste. 6. Pour a fondue in a heated container and serve with fresh bread and vegetables


Italian red wine biscuits

Ingredients: 250 g flour, 100 g sugar, ½ tsp. Baking powder, pinch of salt, 1 tsp. anise seeds (or cinnamon, if you don’t like anise), 80 ml of red wine (Montepulciano or Chianti), 80 ml of olive oil, sugar for biscuits

1. Heat to 180 ° C and spread the baking sheet with baking paper. 2. Mix the dry ingredients: mix the flour, sugar, baking powder, salt and anise seeds in a bowl. 3. Stir in olive oil and red wine, knead the dough. It should be slightly sticky, but not too wet. 4. Take small pieces of dough, roll them into sausages of the finger and form circles or small calendula. Each biscuit is covered with sugar and placed on a pan. 5 Bake for 20-25 minutes until the biscuits are golden and crisp. 6. Cool and serve.
