Nick Bril is cooking this summer at Hotel van Marc Coucke and Bart Versluys in Knokke
From 1 May Nick Bril, the chef of The Jane, cooks in Hotel La Réserve of entrepreneurs Marc Coucke and Bart Versluys. Not in restaurant La Rigue where Peter Goossens recently said goodbye. Glasses will be chief of pop-up restaurant Celestial by the Jane in the penthouse on the top floor of the hotel until the end of August.
Glasses closed the doors of The Jane last Sunday. Without much tame, just with a final top service. In recent months he was mainly in the news because of the accident he caused in the parking lot of the restaurant. Since then he has opted for the shelter. But cooking: he can clearly not resist. There are plans for a new restaurant in Antwerp, but he doesn’t wait that long.

He will receive a maximum of 26 guests per service in the restaurant. Three times in the afternoon, four times in the evening. According to La Reserve, everything will happen in an intimate and luxurious setting. « Not only the restaurant, but also the gastronomic bar is high, » emphasizes the chef himself. « With the dishes we pay tribute to the North Sea and our Belgian terroir with typical worldly influences. » The framework will be the typical The Jane rays, with refined music and art. « I find it extremely exciting to pop at a new location, » says Bril.
Yannick Bouts, general manager of La Réserve Resort, is also happy with the new project. “For various reasons. This is the ideal way for me to find out what is possible with our resort. We are constantly looking for opportunities to offer our guests an experience that they cannot find anywhere else. Nick Bril fits perfectly in that picture. He is one of the best chefs in the country and can expand our culinary offer to be a very high level. The Restaurant La Rigue, where we still serve classics from French and Belgian cuisine, we will be able to spoil our many guests in both La Rigue and Celestial by the Jane, since both will be open to both our hotel guests and pure restaurant visitors. ” With The Jane, glasses got 2 Michelin stars and was a fixed value in the top 50 of best restaurants in the world.

In December, top chef Peter Goossens announced that he will no longer lead La Rigue
