Mother’s day / day

This time I offer three special lunch dishes that will fit perfectly on the Mother’s Day celebration table. They are elegant, delicious and easy to make.


Salmon with lemon-slip sauce

Ingredients: 4 salmon fillets or steaks, salt, pepper, lemon pepper, 50 g butter, juice of 1 lemon, 1 garlic clove (crushed); oven fried vegetables (potatoes, carrots, zucchini, peppers), greens for decoration

1. Salmon pieces frosted and applied. Place in the oven at 180 degrees and bake for 15-20 minutes. 2. Melt the butter in a saucepan, add the lemon juice and garlic. Warms up, but does not boil. 3. Cut the fried vegetables, flake with olive oil, salt and spices and bake in the oven for about 30 minutes. 4. Read put on a plate, pour the lemon-slip sauce and serve with fried vegetables. Decorate with greens.


Chicken and mushroom risotto with parmesan

Ingredients: 1 cup risotto rice, 300 g chicken fillets (sliced ​​pieces), 200 g of mushrooms (such as mushrooms or portobello), 1 onion, 2 garlic cloves, 100 ml white wine (optional), 700 ml of broth, 50 g grated parmesan, 2 tbsp. butter

1. Bake onion, garlic, add chicken pieces and mushrooms. Bake until the excess liquid evaporates and the meat is golden. 2. Add the rice, stirring until partially transparent. 3. Add the wine, then add the broth, stir until the broth is absorbed. 4. When the rice is soft (~ 20-25 minutes), stir in butter and parmesan. 5 Serve with parsley or rucola.


Stuffed peppers

Ingredients: 4 large peppers, 150 g couscous, 1 small zucchini (grated or finely chopped), 1 tomato (sliced ​​cubes), 1 small onion, 2 tbsp. olive oil, 100 g feta cheese, salt, pepper, thyme

1. Couscous shall be prepared according to the instructions on the packaging. 2. Bake onions, zucchini and tomatoes. Add the couscous and squeeze the fetus, mix. 3. Cut the peppers, clean the inside and fill with the mixture. 4. Place in a baking dish, cover with oil and cover with foil. Bake at 180 degrees for about 30 minutes. The last 5 minutes – without foil. 5. Serve with fresh greens and non -dose yogurt mixed with greens.
