In Russia, a boom and an increase in salaries in public catering and hotel business
The shortage of personnel in the growing number of new objects exacerbated competition for linear staff in the restaurant and hotel business. Including for this reason in the spring of 2025, the average monthly salaries in these segments grew by almost one and a half times, to 83.4 thousand rubles.
In the spring of 2025, the average proposed salaries in HoReCA (restaurant and hotel business) throughout Russia grew by 47% year by the year, to 83.4 thousand rubles, the study of the Avito Work service, which was familiarized with Kommersant. HeadHunter confirms the dynamics: according to their data, in May, the average salary in restaurants, hotels and tourism sphere increased by 20% of the year, to 60 thousand rubles. The salary of travel agents increased by 40%year by year, to 74.8 thousand rubles, waiters – by 23%, up to 84.5 thousand rubles, managers for organizing events – by 22%, up to 68.3 thousand rubles, chefs – by 14%, up to 70.5 thousand rubles, bartenders – by 10%, up to 62.8 thousand rubles, they specify in the Avito service of Avito Job ».
In Russia, hotel business and tourism are now experiencing a real boom and growth of salary offers.
This is not just a reaction to seasonal demand, but a reflection of deeper changes in the industry, says Andrei Kucherenkov, director of the category “workers and line professions” of the Avito Work service. The current jump in salaries is largely associated with the need to restructure the market after a period of turbulence, according to Anaid Ayrapetova, regional director in Russia and the CIS Radisson Hotel Group.

HoReca is still a high need for the staff. In January – May 2025, the number of vacancies in the labor market in the field of tourism, hotels and catering was reduced by 1% year by the year, calculated in Superjob. The number of vacancies is reduced by optimizing the budget for attracting and selection, says Tatyana Rybalkina, leader of projects on mass selection of personnel in Unirte (brand Rostic`s). But given that in general, the labor market showed a decrease in the number of vacancies by 11%, the situation in HoReCA indicates the high need for the industry for staff, Superjob analysts clarify. There is an acute deficiency of linear personnel, while leading positions are more likely more candidates than the places themselves, says the co -founder of the Justfood service Sergey Koralov.
According to Superjob, the number of applicants in the industry at the same time grew by 13% year by the year. But they are still not enough to cover the personnel deficit, added to HeadHunter.
Thus, despite the growth of activity among candidates, the market remains “warmed up” from the applicant, which means that salaries continue to grow under the pressure of demand.

In January -March 2025, the number of registrations of a new business in public catering increased by 5.1% year by year, almost 10 thousand (See “Kommersant” from April 16). This happened against the background of increasing the profitability of business and the expectation of the return of international catering brands with which you can work in a franchise.
In the hotel business, there is also an increase in demand and the active opening of new objects. In January -April of 2025, the number of nights in collective accommodation agents throughout Russia increased by 4.3% year by the year, to 89.4 million. According to NF Group forecasts, in 2025 the new number of rooms in the country updated the historical maximum, and in 2026, consultants await hotel with a common number of rooms of 12 thousand rooms.
Irina Blagoveshchenskaya does not expect that in 2025, salaries will grow at the same pace as a year earlier. Despite the high salary growth indicators, the situation in HoReCA stabilizes, Anaid Ayrapetova agrees.
